Start by prepping your chicken and vegetables. Combined all the dry spices in a sautee pan and turn heat on to medium begin toasted spices and vigorously mix so they don't burnabout 2 minutes, this releases the flavor more. Put Oil in bottom 6 quart Sauce pan and heat up on medium high flame add chicken and just cook long enough to have color on all sides, add 2 tablespoons of spice blend. Add in garlic and Cilantro and two more tablespoons of spices. Add remaining vegetables cook until onions are tender. Add the diced tomatoes and simmer 4 minutes add tomato paste and water.
