Here is how you make Hubby's Chicken Chili:

First boil the chicken thighs (we use the kind on the bone and pick it off later) for about 30 minutes, or until the meat is falling off of the bone. Drain water and set chicken aside to cool.Once chicken is cool enough to touch, mix together beans, tomato sauce, corn, pepper, and onions in large pot and place on low heat.While the bean mixture is heating up, pick the meat (and skin if you got the kind with skin on it) off of the bones.Once done, discard bones, skin and cartilage, and add the meat to the bean mixture.Cook for at least 20-30 minutes on medium-low heat.Makes about 10 large (soup bowl sized) servings.Number of Servings: 10Recipe submitted by SparkPeople user DFRESH77.
