5 Skinless/boneless Chicken Breast
1 Lg. onion
2-3 jucie from lemons
1/4 cup flour
1/4 cup olive oil
1 cup low sodium chicken broth
1 package of frozen spinach


How Do I Make Citrus Chicken?

Here is how you make Citrus Chicken:

Peheat large skillet on med/hi heat . Set spinach to steam.Lightly coat chicken with flour. To reduce the amount of flour used, I just sprinkle it on both sides of the chicken breast. Add 2-3 tbspns of EVOO to skillet. Then add your chicken breasts and let them brown on each side. In the mean time cut your onions to sautee.Once the chicken is done. Remove the chicken and add the onions to the same pan, you may need to add a little bit more olive oil. Cook the onions until they are soft and nice'n brown caramelized.When the onions are done add the lemon juice and chicken broth, reduce the heat and be sure to use a spoon to incorporate all of the drippings into the sauce. Now that the sauce has simmered and reduced for about 3 minutes, lower the heat and place the chicken back into the skillet.Serve chicken on a bed of spinach and generously top with onion and citrus sauce!Number of Servings: 5Recipe submitted by SparkPeople user MCHAVEZ494.
