Here is how you make Coconut Chicken Strips:

Preheat oven to 400* F.Pat chicken dry. In food processor, whiz 1/4 c. coconut until very finely ground (flour-like consistency). If beaten egg is very stiff, whisk in a bit of milk. Dip chicken strips in coconut "flour", then milk, then larger flaked coconut. Place on parchment-lined baking sheet and bake 10-12 minutes (till cooked through and golden around the edges), flipping after 5 minutes.
