Preheat oven to 350F. Spray broiler pan with nonstick cooking spray.Mix coconut and panko on a large plate. Place the chicken breast between sheet of plastic wrap. Pound until even and 1/4 inch thick. Season lightly with salt and pepper. Dip in egg mixture, shaking off excess.Press chicken into coconut-panko mixture, coating both sides (this is not a thick coating). Let rest on wire rack or plate for 5 minutes so coating can adhere to chicken.Place on broiler pan and bake for 15 minutes or until chicken is done.
