1 lb boneless skinless chicken breast
3 tbsp extra virgin olive oil
zest of 1 lime
1 tsp ground cumin
1 1/2 tsp ground coriander
2 Tbsp Tamari Sauce
1 1/2 tsp kosher salt
2 Tbsp sugar
2 tsp curry powder
1/2 cup coconut milk
pinch of cayenne
1 small fresh hot chili (serrano or Thai), minced
1/4 C cilantro, chopped
Fresh lime juice (1 lime)


How Do I Make Lime and Coconut Chicken?

Here is how you make Lime and Coconut Chicken:

Trim fast from chicken breast. Pound the chicken breast until even thickness (can use chicken cutlets instead). Mix all ingredients except cilantro and lime juice. Add chicken and marinade to a ziploc bag and chill in refrigerator for up to 2 hours. Once you are ready to cook the chicken, remove the chicken from marinade. Pour the marinade into a small saucepan and bring to a rolling boil. Boil continuously for 2 minutes, stirring occasionally to prevent burning. In a heavy skillet, heat a splash of oil over high heat. Cook the chicken in batches to prevent over crowding the pan. place the breast in the hot pan and cook without turning for a couple of minutes. Flip the breast over and cook until the other side is golden brown. MY CHICKEN WASNT DONE, so I poured the boiled marinade over the chicken and threw in a 350 degree oven for 10 minutes to finish cooking. Spring with fresh lime juice and cilantro and serve.
