Here is how you make Oven Fried Coconut Chicken:

Brush chicken with melted butter (I just dipped it in). Sprinkle with salt and pepper. Dip into coconut mixture to coat.Arrange chicken pieces onto a cookie sheet, so that the pieces aren't touching. Dizzle any remaining butter over the chicken.Bake in a 375 degree oven for 45 to 55 minutes or until the chicken is tender and no longer pink.Do not turn pieces while baking.** Calories estimated are probably MUCH higher than actual.
