2 tbsp extra virgin olive oil
1 onion
2 carrots
1 stalk of celery
8 pitted dates
1/4 cup Kalamata olives, chopped
4 tsp coconut aminos
2 tbsp herbes de provence

Here is how you make Simple Monday Chicken:

Brown the leg quarters on all sides in a skillet in olive oil over medium heat. Chop the vegetables, dates and olives. When the chicken is browned, add the vegetables. Sprinkle herbes de provence, salt and pepper over chicken and vegetables and stir it in. Reduce heat to medium/low and cover for 15 minutes. Add dates, kalamata olives and coconut aminos. Stir, scraping the bottom of the skillet to mix in the brown. Replace the lid until chicken is cooked all the way through. Serving Size:?makes 4 servings of 1/2 leg quarter plus topping
