about a cup of chopped carrots
about 2 cups of chopped potatoes
2 stalks of celery- chopped
one small onion- chopped
2 cans of niblets sweet corn
1 can of peas
1 box of college hill lowfat chicken broth
1 can of cream of low fat cream of chicken soup
blonde roux- 1/4 cups of butter or margerine and 1/4 cups of flour mixed together
salt and pepper to taste
a "dash" of mrs.dash seasoning

bacon bits
oyster crackers
monteray jack cheese

Here is how you make Creamy Crockpot Chicken Corn Chowder:

add chicken broth, cream of chicken soup and milk to crockpot. Chop up carrots, potato, celery and onion and add to pot.Add corn and peas. add pepper and Mrs.Dash seasoning to broth. Make sure to taste broth before adding raw chicken.Chop up chicken breasts and add to pot. I leave the crockpot to simmer about 8 hours, either overnight or while I am at work. In a saucepan, mix 1/4 cup of melted margarine or butter or olive oil ( i like heart smart buttery spread with flax) and 1/4 cup flour. Get to the consistency of mashed potatoes and stir constantly on low heat for about 10 minutes. This is a blonde roux, when added to your soup, it will make it nice and creamy. Add roux to soup and allow to cook for about 20 more minutes.
