2 cups chicken broth
3 Tbsp cornstarch
3 Tbsp light cream

This goes very well with rice. Start the rice about the same time you start cooking.Prep the veggies:Halve the pablanos and put them under the broiler till the skins sizzle and blister. Let them cool a few minutes and peal the skins off. slice them into 1 inch pieces.Cut up the onion, broccoli, mushrooms. Skin the garlic and crush it in a garlic press.Prep the Chicken;cut into thin, bite-sized peices. I slice it when it's still a little frozen in the middle. It's easier to get it thin.Prepare the sauce base: Mix the cornstarch, 1 3/4 cups of broth and the light cream in a bowl.----------Heat the oil. Add the onions and mushrooms. After cooking at fairly high for about 2 minutes, add the crushed garlic and then immediatley add the chicken. Cook until the chicken about 1/2 done. Add the broccoli. cook for about 5 more (until the broccoli is just starting to cook a little. Slowly add the broth mixture and bring to a boil. The reserved liquid is to add if it's too thick and to add extra corn starch if it's not thick enough. Put the peppers in. let it cook for a minute or two more. Salt and pepper to taste.
