6-8 corn tortillas (enchilada size)(I an using the small ones so I might need 16 or less)
1 pre-cooked plain rotisserie chicken, shredded(I am using chicken breasts either diced or shredded up to 4 breasts cooked)
1 cup sweet corn(I am using frozen corn)
4 cups shredded Mexican blend cheese, divided in half(I will cut the amount of cheese to 2 cups)

3 tablespoons butter(Changing to 2 Tbs Smart balance and 1 Tbs butter)
3 tablespoons all purpose flour
1-1/4 cups chicken broth(I used the broth that I poached the chicken in.)
1 ? 10oz can cream of chicken soup(low fat low sodium soup)
1 cup sour cream(reduced fat and I really only needed to add 3/4 cup)
1 ? 4oz can chopped green chiles
1/4 teaspoon ground black pepper
1/4 teaspoon sea salt

Here is how you make Creamy White Chicken Enchiladas:

I am going to poach or sear my chicken before chopping or shredding. Then to assemble separate chicken, corn and 1/2 of the cheese mixture through out enough tortillas to fill a baking dish up to 16 total. Lay them seam side down in the pan. The sauce is made by making a rue with the butter and flour(melt butter and add flour and cook out flour taste). Then you add the broth and cream soup and sour cream with the green chilis to make the sauce. *Don't forget to season the food with salt and pepper* Stir sauce with a wisk and after about 5min it should be warm and smooth. Pour sauce over the enchiladas and top with remaining cheese. Bake in a 350 deg oven for 25-30 min. Serving Size:?With small corn tortillas we should have 8 servings of two enchiladas ea. This may change as I tweek the recipe.
