Modified version of one of my favorite recipes. You can substitute fat free cream cheese if you wish, but I find the low fat has a nicer consistency. I also drain a lot of the liquid before serving, because I like the dish thicker. I like to put my serving over brown rice and serve with a side salsa salad.
