1 Tbsp Olive oil
1 cup Mushroom slices
1/2 cup chopped onion
3 Large Chicken breasts (30 ounces total), cut into bite-sized pieces
2 tsp ground ginger
2 cloves garlic, crushed (you can add more to taste)
3 tsp Curry powder
Red pepper flakes (to taste)
1/4 cup chopped Cilantro (4 tbsp)
1 can diced tomatoes (14.5 oz)
1/2 cup vegetable broth


How Do I Make Curry Chicken Breast?

Here is how you make Curry Chicken Breast:

Heat olive oil in deep dish skillet. Cook onions and mushrooms until tender, then remove from pan. Add chicken and cook until no longer pink. Add ginger, garlic, curry, red pepper flakes, cilantro, tomatoes, and broth. Stir and let it come to a boil. Reduce heat and return the mushrooms and onion to the skillet. Cook for 5 more minutes. Serve over rice, cous cous, as is, over salad, or in a wrap. (Nutritional information is for chicken curry only).
