3-4 boneless, skinless chicken breasts
1 medium onion, chopped
3-4 medium stalks celery, chopped
4T Margarine or Butter
6T white flour
1T curry powder
1/2t ginger
salt & pepper to taste
1/2c lowfat milk (I used 1%)
1 medium firm apple, cubed
Condiments: Raisins, peanuts, bacon, coconut, green onion


How Do I Make Lowfat Chicken Curry?

Here is how you make Lowfat Chicken Curry:

Cube chicken and boil until cooked. Remove chicken from broth and set aside. Save broth for later. Sautee onion and celery in margarine or butter until tender. In a seperate bowl, mix flour, curry, ginger, salt & pepper. Add slowly to onions and celery, stirring quickly. Add chicken broth while stirring quickly until sauce is a good consistency. Add at least 1/2 cup milk. Add the cubed apple. Stir in cubed chicken pieces last. Serve over rice with any of the listed condiments or alone.
