Here is how you make LIGHT Chicken and Dumplings!:

In a large soup pot, heat 2 T olive oil over medium-high heat. Add chicken breast and cook until brown, about 10 minutes. Turn chicken over, and add onion, celery, carrots, leeks, turnips and potatoes. Add salt & pepper. Cook until water is released from vegetables and they begin to brown, about 5-7 minutes. Add vegetable broth and bring to a boil for 10 minutes. Reduce heat to medium-low, cover and and cook an additional 30 minutes to fully cook chicken and vegetables. Use tongs (right in the soup pot) to break up chicken breast and remove bones, if any. Return the mixture to a boil. While mixture returns to a boil, prepare the dumplings by separating refrigerated biscuits. Cut each biscuit into 4 equal sections and drop into boiling mixture.
