What Are The Ingredients For Easy and Healthy Chicken Recipe?

The ingredients for Easy and Healthy Chicken are:

Large, Deep Skillet
4-6 Boneless, Skinless Chicken Breast
1 can (10.75 oz) Low Fat or Lite Cream of Mushroom Soup (Cream of Chicken can be substituted)
3/4 of the soup can of water
2 tbsp Light Olive Oil
1 Garlic Clove Minced
2-3 Green Onions Chopped (Optional)
1/2 of a small Jalepeno Pepper, seeded & minced (Optional)
1/2 can drained Peas or Corn (Optional) (Freeze the rest for soups later in a sealed baggy)
Salt, (I use a Salt Substitute but you can use the real deal), Pepper and Onion Powder to taste
Dried Parsley (Optional)
Brown Rice or Wheat Noodles - Optional


How Do I Make Easy and Healthy Chicken?

Here is how you make Easy and Healthy Chicken:

Add Olive Oil to skillet and heat on MediumAdd minced Garlic and Jalepeno to pan and brown, push to outer edges of pan.Salt and Pepper Chicken Breasts and place in skillet. Lower temperature if needed. You don't want to cook it to fast.Cook on each side until juices run clear or there is no pink.Remove Chicken from pan to a plate temporarily.Add soup and water to skillet, stirring briskly to blend the mixture together. Turn heat to Medium. Add Onion Powder to your taste and a little more Salt and Pepper. Once soup/water are blended, add peas or corn and stir. Cook on Medium for about 5 minutes.Add Chicken back to skillet and cover with lid. Cook on low for about 5 minutes until bubbly, stirring once during that time.Add chopped Green Onions and stir in. Cover skillet for about a minute then turn burner off. Remove lid and sprinkle dried Parsley lightly over Chicken as a garnish, optional.Can be served by its self or over rice or noodles.I fix brown rice cooked in low fat chicken broth or use chicken bouillon in the place of plain water and it is very tasty!Number of Servings: 4Recipe submitted by SparkPeople user DJSTEPHENS.
