1 pound baby portabellas, sliced
1/2 small onion, diced
2 tablespoons butter
2 cups brown rice, cooked
1 cup chicken broth, hot
salt and pepper


How Do I Make EASY CHICKEN AND MUSHROOMS?

Here is how you make EASY CHICKEN AND MUSHROOMS:

Place one tablespoon of butter in a skillet over medium-high heat. Let heat and start to brown. Salt and pepper chicken breasts. Then add in chicken breasts and cook for about 4 minutes on each side, or until chicken starts to brown. Remove chicken from pan, set to the side. Slice into 1 inch slices.Add 2nd tablespoon of butter to skillet, turn down to medium heat. Add onion and saute until glassy. Add mushrooms and cook about 7 minutes until soft.Add one cup of hot chicken broth to the mushrooms and onions. Bring to a simmer and add chicken back to pan.
