Here is how you make Easy Pineapple Chicken:

Drain pineapple juice into a medium bowl. Set the pineapple chunks aside.Add 1 1/2 tbsp. teriyaki, and add cut chicken. Cover and allow to marinade for 15 minutes.Heat a wok or shallow pan to medium heat. Spray lightly with olive oil or cooking spray. Add chicken, with the marinade, and season with red pepper and coriander. Cook until almost done. Add pineapple, cover and continue cooking on low or medium low while rice is cooking.Serve chicken and pineapple over rice, with sauce from the pan.
