Cut chicken breasts into paillards. Pound any thick areas. Set up 2 dipping bowls or pans. Place egg in one. Beat egg with fork. Place panko crumbs in second tray. Heat oil in skillet over med high heat. Dip chicken in egg then in panko. Place dipped paillard into skillet and cook until brown on both sides. Remove from skillet. When all breasts are cooked return to skillet and cover until thermometer reaches 165 degrees. Serving Size:?1 paillard
