The ingredients for Egyptian Chicken are:

Cut up whole chicken (to save calories, boneless, skinless breasts could be used but taste would be compromised)

Thinly sliced Potatoes (use enough to cover the bottom of a large baking dish).

Sliced Tomotoes

Freshly squeezed lemon juice (1 to 2 depending on the size of your dish)

Spices to taste (Cumin, red pepper, salt are typical. Allspice is another you can use for an authentic Arabic flavor).


How Do I Make Egyptian Chicken?

Here is how you make Egyptian Chicken:

Thinly slice the potatoes and cover the bottom of a large baking dish with them. Layer the sliced tomatoes over the potatoes and finish up with the chicken on top. Make sure to sprinkle each layer with the spices. Squeeze the lemons and pour the juice over the whole dish. Roast at 350 degrees for 60-90 minutes (again it depends on how large your dish is and how big the chicken pieces are). The potatoes should be soft and the chicken done.
