How Do I Make Chicken Fajita Bowl?

Here is how you make Chicken Fajita Bowl:

Heat oven to 425F.Cook rice in rice cooker or boil on stove (1:2 ratio, rice to water). As the rice is cooking, peel garlic or use pre-minced garlic (add as desired). Divide into 2 batches and set aside. Sprinkle chicken generously with salt and pepper, add half the garlic, half the Mexican seasoning. Set aside.Heat frying pan. Add oil once pan is hot enough and add the chicken. Cook 2-3 mins per side. Transfer chicken to baking sheet and bake until cooked through; approx. 7-10 mins or to 165F.At this time, zest and squeeze the lime and add to sour cream. Put aside. Dice tomatoes, cube the green peppers, thinly slice green onions and roughly chop cilantro. Set aside the tomatoes, green onions and cilantro for now. In the same frying pan used for the chicken add 1 tbsp. oil, green peppers, corn, remaining garlic and remaining Mexican seasoning. Stir often and cook until peppers are a tender-crisp, usually about 4 mins. Once cooked, keep on low. Chicken and Rice should be cooked now. Take chicken out of oven and let rest while you assemble everything else. Add rice to the pepper and corn mixture. Add half the cilantro and half the green onions to the rice and pepper/corn mixture. Season with a bit more salt and pepper, if desired. Thinly slice the chicken. Dish up the rice mixture into individual bowls. Top with chicken and tomatoes. Sprinkle with cheese and remaining cilantro. Dollop with lime crema. Squeeze with lime wedge, if desired.
