1 lb. (16 oz) chicken breast, cut into strips
1 large onion (2 small onions) cut into thin strips
1 large bell pepper (~1.5 cups) cut into thin strips
2 large cloves of garlic, minced

1 tbsp ground cumin
2 tbsp chili powder (mexican if you like it hot)
2 tsp oregano
1 tsp salt
1 tsp black pepper (ground or cracked)
1 tsp red pepper (or to taste)


How Do I Make Louis's Chicken Fajitas?

Here is how you make Louis's Chicken Fajitas:

Prep:Cut chicken into about 2" by 1/2" strips. The size isn't imperative as long as they're cut similarly to ensure even cooking. Blend the ingredients listed under "seasonings" in a small bowl or dish and sprinkle over the chicken breast, being sure to mix the chicken around to ensure that the seasoning blend coats the meat. Save a small amount (1-2 tsp) of the blend for the vegetables. Set chicken aside.Peel onions and remove the stem, seeds and tough white membranes from the inside of the bell pepper. Rinse out remaining seeds inside the pepper. Cut the onion(s) and pepper in half and slice them into thin strips. Mince the garlic cloves and set these ingredients aside.Cooking:In a large skillet, add 1 tbsp of olive oil into the pan and heat it up over medium high heat. Add chicken breast and cook for 5 minutes or until the chicken is mostly cooked, stirring occasionally. Remove the chicken from the pan and set it aside.In the same pan, add 1 tbsp of olive oil (the pan should still be relatively hot), add the onions, peppers, garlic and remaining seasoning blend. Saut? the vegetables for 10 minutes, stirring occasinally. Add the chicken back to the pan with the sauteed vegetables and saut? for an additional 5 minutes.In the last five or so minutes of cooking, heat a small pan over medium high heat. One at a time, heat the tortillas until they just start to brown on both sides.Add the chicken and peppers/onions to the warmed tortillas and enjoy!
