*Brown Rice, medium or short grain, 2 cups dry
*Kraft Mayo Light Mayonnaise (Mayo), 1 cup
*Campbell's Fat Free Cream of Mushroom Soup-1CAN
*Campbell's Fat Free Cream of Chicken Soup-1CAN
*3 Chicken Skinless Breasts chopped into small bite size pieces
*Mushrooms, fresh, 2 cup, pieces or slices
*Onions, raw, 1 cup, chopped
*Fresh Asparagas, 1/2 cup chopped
*Broccoli, frozen, 1 package (approx 10 oz)
*Breadcrumbs, 1.5 cup
*Sargento Reduced Fat Cheese, 4 cups (approx. 2 bags shredded)

COOKING TOOLS NEEDED:
*Large Saute Pan
*Rice Cooker (or pot to boil rice)
*Large casserole dish (your largest)
*Big bowl to toss rice with soups before making into a casserole
*Aluminum foil


How Do I Make Chicken Divan - Lower Fat Version?

Here is how you make Chicken Divan - Lower Fat Version:

In a rice cooker (or however you cook your rice), prepare the 2-cups of brown rice so it is cooked and soft. Preheat oven to 375 degrees. Next, in a large (and I mean large) saute pan, spray generously with non-stick spray and on high heat saute chicken until it's almost crispy on the sides (not burned, but firm and yummy). Add more non-stick spray , move the chicken to the outer edges of the pan and toss in all the veggies to saute them, too (asparagas, onions, mushrooms, broccoli). Keep tossing mixture with dash of salt and pepper then set aside. In a large bowl, toss the cooked rice with the two cans of soup and the mayo. Mix thoroughly. In the casserole dish, spray generously with non-stick spray. Spread 1/2 the breadcrumbs along the bottom, basically making it just so it's covered but not a thick layer. Spread 1/2 the rice mixture and pat down evenly with a spoon. Spread 1 bag of cheese. Spread 1/2 veggie/chicken mixture. Spread remaining 1/2 rice mixture and again pat it down. Sprinkle the rest of the veggie/chicken mixture, then top with reamining bag of cheese and top that with remaining breadcrumbs on very top of cheese. Measure a piece of aluminum foil large enough to cover the casserole. Spray the underside of it with non-stick spray (so it doesn't stick to your cheese topping, and attach it firmly covering the casserole, but if you have enough room, tent it a little (not vent, but tent) so that the foil is not touching the cheese (if possible). Cook at 375 for 30 mins. Take off foil, turn oven up to broil and give it a good crispy top (450 degrees on broil) for 5-10 mins to make it crusty. Makes 8-10 generous size servings.*Note: You can do all of the preparations in advance, and put this in the freezer or fridge right after the foil step and just take it out and pop it in the oven before you're ready to eat.
