6 Flour Tortillas ( I like La Tortilla Factory, it has

1 can reduced fat/sodium cream of chicken soup.
1/2 cup reduced fat sour cream
1-2 tbsp of taco seasoning (to taste)
1/2 cup reduced fat cheddar cheese
1-1 1/2 cups refried beans


How Do I Make Creamy Chicken Enchiladas (Lower-Fat)?

Here is how you make Creamy Chicken Enchiladas (Lower-Fat):

1.) Place chicken and soup in oven safe dish and cook coverd at 350 degrees for about 30 min or until chicken is cooked and tender. (This can also be done in a crock-pot on low for 4hours)2.)Once chicken is done set on a plate to allow to cool. 3.) While chicken is cooling add sour cream and taco seasoning to the soup in pan to make sauce. If to thick add some water, or fat free milk. You want about 1 1/2- 2 cups of sauce.4.) Heat and stir refried beans so they're creamy and not stiff. 5.) Once chicken is ready to handle shred with fork, or cut into chunks. Add about 1/4 of sauce to chicken.6.) Spray bottom of a 9x13 baking pan with non-stick cooking spray and spread about 1/4 cup of sauce in the bottom of the pan, enough to lightly cover.7.)Heat tortillas in microwave a few minute to make them soft.8.) Put some beans and then some chicken mixture into each tortilla and roll up. Place seam side down in backing pan.9.)Pour remaining sauce over enchilads, top with cheese, and cover pan with foil.10.) Bake for about 20 Minutes @ 350 degrees covered. After 20 Minutes remove foil and bake for another 10 minutes.Now top with any of your favorite fresh veggies! Lettuce, tomatoes, onions, cilantro!
