Brown chicken and sautee onion until browned.Add:- 1 large or 2 small cans Diced Tomatoes with all the juice (or crushed tomato & water for a more intense tomato flavor)- Chopped turnip- 1" chunks of zucchini and summer squash- 1 can chickpeas (rinsed)- season with cumin powder and tiny sprinkles of cayenne to taste (optional because of use of Harrissa (see below))Simmer until chicken cooked (depends on size of chicken pieces). Remove chicken and set aside. Keep simmering the rest of the mixture until turnip is soft. Then return chicken to pot.Serve with Harrissa (spicy paste) to taste: To make Harrissa: Mix 2 parts Cumin powder and 1 part Cayenne pepper powder, drizzle olive oil until a paste consistency. (very spicy!)Optionally garnish with chopped fresh tomatoes and parsley (to cut the spice).Makes 4 large servings (for protein)...more if eat vegetables without chicken.
