Add chicken (water just just cover chicken). Add 2 tsp. of the taco seasoning. Bring to a simmer until chicken is cooked. Drain. In the same pan (with the chicken), add tomatoes, green pepper, corn, salsa and the rest of the taco seasoning. Cook on low for about 10 minutes.In a 8x8 pan, layer as follows: 1/2 meat mixture, 3 tortillas, sour cream (spread), rest of meat mixture, 1/2 cheese, 3 tortillas and taco sauce (spread). Cover and bake for 30 minutes at 375. Top with remaining cheese and cook another 5 minutesMake ahead: assemble as directed leaving off the last half of the cheese. Refrigerate up to 24 hours. When ready to serve, bake at 375 for 40 minutes.
