Roll each chicken piece in flour, shake off excess and dip in beaten eggs. Roll each piece in bread crumbs pressing the crumbs into chicken. Gently shake off crumbs and place on a wire rack. once all chicken is breaded, place rack on a cookie sheet and refrigerate for two hours to allow the bread crumbs to fully adhere. When ready to fry, heat up 4lbs of lard in a deep fryer or heavy deep frying pan. Heat to 250 degrees. Fry chicken pieces just a few at a time to maintain the 250'F temp. for 20 minutes each batch. Remove from fryer and place on a rack in a preheated oven to 150'F to keep warm while frying the remaining batches. Serve warm from the oven.
