This is a yummy alternative to oil fried chicken. It uses parmesan cheese as a coating which in the oven turns crispy. When I first made it, I thought it for sure would burn, but it doesn't! The chicken stays juicy and the coating gets crispy! You may adjust the seasonings as you would like and this can be used with drumsticks as well.

The ingredients for Parmesan Oven Fried Chicken are:

4 skinless chicken breasts (bone in will increase cooking time as well as size of breasts- make adjustments as needed.)
1 medium egg (you could also use an egg substitute.)
1/2 cup of nonfat milk
1/2 cup of grated parmesan cheese (fresh would work as well- you may need to use a little more or less depending on the size of your breasts.)
1 tbsp dried basil
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried parsley
1 tbsp dried rosemary
1 tbsp dried oregano
1 tsp black pepper
1 tsp paprika
you may adjust the seasonings to your taste or use an all in one like Mrs. Dash. I do not add salt due to using the parmesan cheese.

Here is how you make Parmesan Oven Fried Chicken:

makes 4 servings- 1 breast per person.preheat your oven to 400 degrees. As ovens vary, set your temperature at what you would usually use to bake chicken breasts.Place milk into a bowl for dipping chicken into. Place egg into a separate bowl and slightly beat it adding the paprika to it. Combine the cheese and remaining seasonings in a third bowl. Make sure you have rinsed and patted your chicken dry.Take each piece of chicken and dip it first into the milk, then into your egg mixture, and last into your cheese mixture. Make sure to coat your chicken evenly. Place the coated chicken into a baking dish. I use a non-stick casserole. If you are not using non-stick, then i would suggest using a spray like Pam on your baking dish.Place your chicken in the oven. If you are using smaller, boneless breasts cooking time will be aprox. 20 to 30 minutes. For larger or bone in breasts, i increase the cooking time slightly to aprox. 40 to 45 minutes. Make sure the juices run clear and the meat has no pink in it! I have also used this recipe with chicken legs which are also delicious. You may want to parboil legs before coating them to prevent blood from releasing during bake time. I cooked them for aprox. 40 minutes and also put them on a cooking rack to prevent soggy bottoms.
