1 (4 lb.) fryer chicken
3 T. olive oil
1 tsp dried thyme
1 tsp. dried sage
1/2 tsp. dried rosemary
1/2 tsp. pepper
1/2 c. chicken broth (reduced sodium)
1/3 c. dry white wine
3 heads garlic
1 lemon, quartered

Here is how you make 30 Garlic Chicken:

Coarsely chop celery and place across bottom of crock pot. Remove neck & gizzards from chicken. Thoroughly rinse & clean chicken & pat completely dry. Place lemon quarters inside chicken cavity. Rub olive oil all over outer chicken skin. In small bowl, combine dried thyme, dried sage, salt, dried rosemary & pepper. Mix well & sprinkle seasoning mixture over chicken. Place seasoned chicken over celery in crock pot. Pour chicken broth & dry white wine around chicken. Separate garlic into individual cloves, but do not peel the cloves. Place cloves all around chicken. Cover & cook on low setting 10 to 12 hours, or on high for 7-8 hours. To serve, remove chicken to a serving platter & let cool slightly before slicing.
