lightly spray large skillet with pambrown chicken cubes till almost cooked through.toss in diced tomatoes, onions, pepper, salt, minced garlic (or 2 tbsp of garlic powder), 1 1/2 cup of chicken stock. Bring to a boil and then cover and simmer over low heat for 30 minutes then add 2 cups of minute rice let sit for 5 minutes. Toss in fresh parsley , basil and oregano.
