1 tsp poultry seasoning
2 Tb EVoo
2 red bell lpeppers, seeded & cut in 1 inch pcs.
3 hot cherry peppers choppe or thinly sliced
1/4 cup garlic, chopped or thinly sliced
1/2 cup dry white wine
1/2 cup chicken stock
1/4 cup chopped italian parsley
2 Tb juice from hot pepper jar

Here is how you make Chicken Scapariello:

Heat lg. skillet over med-high heat. Cut chicken in large chunks and season with salt, pepper and poultry seasoning.. Add 1 T oil to hot pan. set chicken into pan and do not turn for 2-3 min or you will tear the meat. brown chicken 3 min. on each side and then remove chicken to a warm plate. Add remaining oil, peppers and garlic to pan and saute for 5 minutes, tossing frequently. Add wine to pan and reduce 1 min. Scrape pan drippings. Add broth and bring to a bubble. Set chicken back in pan. toss the parsley with the chicken and peppers. Cook through, 2-3 minutes more.
