Preheat oven to 375. Place potatoes, carrots, red onion (chopped into thin wedges), orange juice, garlic, oil, thyme, and salt into a large resealable plastic bag or bowl with lid. Shake to combine. Transfer vegetables to a shallow roasting pan (reserve bag and juices). Cover and bake for 10 mins. Meanwhile, add chicken to the bag or bowl with orange juice mixture. Shake to coat chicken. Transfer chicken to roasting pan with veggies. Bake, uncovered, for 55 to 65 minutes or until chicken is done and veggies are tender.
