This is a take-off on the popular Crustless Quiche recipe I found on the site. I did not have any almond milk on hand which I would have normally used hence the heavy cream/water dilution. I was surprised that it did not bump the calories up that much. Love the versatility of this recipe and the fact that it is HIGH in protein! WIll try to get a photo of the next one I make.

1T Extra virgin olive oil
1/2 C Zuchinni, diced
1 C Muchrooms, Sliced thin
1/2 med onion, chopped
2 tsp Garlic, crushed
4 Oz Chicken, cubed
2 tsp Thyme, ground
1/8 tsp Cayenne pepper
1 tsp Red pepper flakes
2 Whole large eggs
1/2 C egg substitute*
3/4 C Heavy whipping cream**
2/3 C Water**
1/2 C Fine whole wheat flour (King Arthur Brand)
1/2 tsp Baking powder
Salt
Black pepper, cracked
1/4 C Fine shredded Mozzarella-Asiago cheese blend
1/4 C Fine shredded Sharp Cheddar cheese

*1/2 C of egg whites may be substituted for egg substitute
** 1 1/3 C of Almond, Rice, Soy, Skim milk, etc. may be sustituted for cream and water.


How Do I Make Thyme- Garlic Chicken and Zuchinni Quiche sans Crust?

Here is how you make Thyme- Garlic Chicken and Zuchinni Quiche sans Crust:

Makes 8 slices (single servings)Preheat over to 400 F.Lightly grease the bottom and sides of a quiche/tart or 10" pie pan and set aside.Heat the olive oil in a medium fry pan. Add the zuchinni and mushrooms and cook thru. Add onions and cook until transparent. Add garlic and cook and toss for about 60 seconds but not browned. Add chicken, Thyme, Cayenne and pepper flakes, cooking until chicken is no longer pink and juices run clear. Remove from heat and set mixture aside.In a blender or medium size bowl mix together the eggs, egg substute, cream, water, flour, baking powder and black pepper to taste. Spoon meat and vegetable mixture into quiche/ pie plate, add cheese. Pour egg mixture over the top. Bake for 25 minutes or until center is set. Remove from oven and allow to cool for a minimum of 10-15 minutes before cutting .*Note: I do not add salt until after the quiche has baked. Salt effects the way eggs cook when they are the major ingredient in a recipe, making them "rubbery".
