Here is how you make Chicken with Lime and Ginger:

1) Cut the chicken breast into thin strips and season with salt and black pepper.2) Heat a non-stick pan. Add the chicken and cook until lighty browned. Add the leek, garlic, ginger, cumin ans lemongrass paste and continue to cook over a low heat for 2 minutes.3)Add the chicken stock and the lime zest and juice and bring to a gentle simmer.4) Fold in the soft cheese and bring back to the boil.5) Just before serving sprinkle with the coriander.Serve with Basmati rice.
