With a flat mallet or bottom of small sauce pan , gently pound until each is about 1/4 inch thick.2)In rimmed plate, mix flour and pepper. Dip breast into flour to coat all sides evenly. Set Aside.3) In frying pan, melt butter at medium heat tilting pan to coat bottom. Add breast in a single layer and fry 4 min, loosing with spatula after 1 min. Flip and fry breast till they are completely cooked. Transer to finner plates, cover with aluminum foil to keep warm, and set aside.4) Increase heat to medium-high, pour chicken broth into frying pan and brng to boil. Add the ginger. With the spatual scrap bottom of pan to stir in browned chicken peices.Boil until the volume of the liquid is reduced by half 6-8 mins.5) Mix in mustard and green onions.Stir for one more min.6)spoon out sauce equally over breast.
