Here is how you make Grapefruit Chicken:

1. Peel and slice one grapefruit into quarters. Reserve (separately) the juice and grated zest of the second grapefruit.2. Mix together the curry powder, grapefruit zest and pepper. Coat the chicken breasts with the mixture.3. In a large pan over medium heat, heat oil. Add chicken and cook for 12-15 minutes until chicken is browned on all sides and tender. Remove chicken from pan and store in warm place.4. In cooking pan, bring grapefruit juice and vinegar to a boil. Cook while stirring for 3 minutes. Add grapefruit sections. Cook over medium heat for 2-3 minutes.5. Remove grapefruit sections from the pan. Bring the sauce back to a boil and cook it a little bit more. 6.
