1 green pepper, cut in 2" pieces
1 yellow pepper, cut in 2" pieces
1 large red onions, cut into 8 wedges
1 pint cherry tomatoes
1 zucchini, sliced
1 yellow squash, sliced
2 boneless, skinless chicken breasts (approx. 8 oz.), cut in half
1/4cup olive oil
1 1/2 Tbsp balsamic vinegar
1/2 tsp paprika
1 tsp thyme
1 tsp. salt
1/2 tsp. pepper
1/4 cup, crumbled feta cheese

Here is how you make Greek Chicken Traybake:

Preheat oven to 400 degrees. Mix olive oil, vinegar, paprika, thyme, salt and pepper. Add 1/3 of this dressing to prepared vegetables. Place vegetables on large cooking sheet. Place chicken on top of vegetables and brush with sauce. Bake for 25 minutes. Remove from oven and add olives and 1/4 cup feta cheese, stirring well. Return to oven and bake until chicken is cooked through - 10-15 more minutes, adding tomatoes during last 5 minutes.Serving Size:?4 servings
