Fresh Chives, 1 tbsp chopped
Oregano, ground, 2 tsp
Parsley, dried, 2 tsp
Garlic clove, 2 serving
Olive Oil, 2 tbsp
Couscous (dry), 1 cup
mint leave, 1 tbsp
Chicken Broth, .5 cup (8 fl oz)
Egg substitute, liquid (Egg Beaters), .25 cup
Lemon juice, 1 tbsp
Lemon Peel, 1 tsp

Here is how you make Greek Chicken with Minted Couscous:

1. Place chicken breast between two sheets of heavy plastic wrap, and flatten to 1/4-inch thickenss, using a meat mallet (or a rolling pin). Set aside.2. In a small bowl, combine cheese, chives (washed and chopped), oregano, parsley, garlic (peeled and minced), and 2 teaspoons of the oil. Mix to forma smooth paste.3. Place 1/4 cheese mixture down center of the chicken breast.4. Fold up the bottom and fold in the sides of the breast. Fold down the top, completely enclosing the cheese mixture. Repeat for the other three breasts.5. Couscous may be prepared according to package directions at this time. Stir in freshly chopped mint before serving. Keep warm.6. For chicken, heat the remaining oil in a heavy skillet over medium-high heat.7. Add stuffed chicken, seam side down, and saute until browned, about 5 minutes.8. Turn over carefully, loosening the chicken fromt he bottom of the pan.9. Continue to saute until the chicken is cooked through, about 3 to 5 more minutes.10. Transfer chicken to a plate.11. Add chicken broth to the skillet, scraping up any browned bits. Reduce heat to medium.12. Whisk the egg substiture with the lemon juice and peel (grated). Add this to the simmering broth, whisking constantly.13. Return chicken to skillet and simmer, spooning the sauce over the chicken until lightly and sauce is slightly thickened, about 2 to 3 minutes.14.
