Onions, raw, .75 cup, chopped (about 1 onion))
Garlic, 2-3 cloves chopped
Kalamata, Olives, pitted, 1 oz (I use TJ's packed in olive oil)
Del Monte Diced Tomatoes, No Salt Added, 1 can
Trader Joe's Authentic Greek Feta, 2 oz (I use fat free)
Couscous, 1.5 cup, cooked (I use whole wheat couscous for more fiber)

Here is how you make Greek Feta Chicken made from Trader Joe's pantry:

Brown onions, pepper, garlic and chicken thighs using a bit of the olive oil from the olive jar or 1 Tof olive oil. ( I use boneless, skinless from TJ's). Add I can diced tomatoes, 1 oz. chopped Kalama pitted olives and oregano. Let simmer around 30 minutes. If you need more liquid, add a bit of brine from olives, or chicken stock or water. You probably won't need to add additional salt with olives.At the last minute add feta and just stir to incorporate.
