Chicken:

4 chicken thigh/leg quarters, skin removed
2 cloves garlic, pressed
1 packet Herbox no sodium chicken boullion
1 tsp. Cavenders Salt Free Greek Seasoning
1 tsp. Mrs. Dash Lemon Pepper
1 cup water

Yogurt Sauce:

1 cup fat free plain yogurt
1 clove garlic, pressed
2 Tbsp. cucumber, diced very small
1 tsp. minced onion (I actually pressed the mince through a garlic press)
1 tsp. lemon juice
1/4 tsp. dried dill weed
course ground black pepper (couple spins around of the grinder)

Additional garnishes:
shredded lettuce
chopped onions
sliced black olives
diced tomatoes


How Do I Make Greek Seasoned Chicken Pitas?

Here is how you make Greek Seasoned Chicken Pitas:

1) Season chicken on both sides with Greek seasoning and lemon pepper.2) In frying pan, put 1 cup water, boullion packet and pressed garlic.3) Add chicken and simmer over low heat, turning chicken frequently until very tender. You may have to add more water during cooking - if so, add about 1/4 cup at a time. (about 45 min.-1 hour ) If liquid cooks dry, add more water, 1/c at a time.4) Remove chicken from bone and shred.5) Place back in pan and broth for a few minutes to warm back up. While chicken is cooking, mix all yogurt sauce ingredients together so the flavors can meld. Serve in whole wheat pitas. Garnish chicken with yogurt sauce and additional garnishes as desired.
