1 cup orzo, cooked per instructions
1 tbsp olive oil
1 yellow onion, medium, diced
Oregano, to taste
Red pepper flakes, to taste (we like a lot!)
Sea salt and cracked black pepper, to taste
Garlic powder
Garlic cloves
1 lb boneless skinless chicken with fat trimmed & cut into bite sized pieces
2 cups diced tomatoes (we used fire roasted canned)
2 tsp tomato paste
Large handful of kalamata olives, sliced
2 cups baby spinach
3-4 fresh basil leaves, torn (ok to use dry if you have it)
Reduced fat feta cheese


How Do I Make One Skillet Greek Chicken?

Here is how you make One Skillet Greek Chicken:

Cook orzo, per instructions. Drain the orzo and all but 1/2 cup of cooking liquid through colander. Reserve liquid.While pasta cooks, heat olive oil in large skillet over medium heat. Add the onion and season with red pepper, oregano, salt & pepper to taste, stirring often for 3-4 minutes. If you like garlic, add minced garlic here as well. Remove from skillet and set aside. Season chicken with a sprinkling of oregano, garlic power, salt and pepper to taste. Place chicken into same skillet over medium high heat (add cooking spray if needed). Saut? 6 minutes turning to brown all sides. Remove from pan and keep warm.Add reserved water to skillet. Make sure to scrape up any browned bits from the chicken. Add tomatoes, tomato paste, onions, and olives. Cook over med high heat for 2 mins. Add chicken, orzo, basil and spinach leaves stirring until spinach wilts. Taste and add season if needed.
