Slice bok choy into 1 inch pieces. Cut chicken into bite size strips. In a bowl stir cornstarch into chicken broth until dissolved. Add garlic & ginger. Heat oil in frying pan or wok over medium high heat. add chicken and stir-fry until no longer pink, about 3 min. Ad broth mixture & bok choy. Pan will be full but greens will wilt quickly.
