1/4 cup extra-virgin olive oil
1 Tbls Dijon mustard
1 Tbls freshly minced garlic
1 tsp fresh oregano leaves
1 tsp freshly chopped parsley
1 Tbls brown sugar
1/4 tsp each: freshly ground pepper and salt

Here is how you make Bahama Breeze Bahamian Grilled Chicken over Greens:

Instructions:1. To marinate the chicken, place cubes, thyme, 2 teaspoons chopped garlic, 2 tablespoons olive oil and 1 teaspoon each freshly ground salt and pepper in a bowl. Toss to coat and evenly mix. Cover and place on the bottom level of your refrigerator and let marinate at least 8 hours. 2. Skewer vegetables and marinated chicken until 2 (12-inch) skewers are full. Leave a little space between the items for proper cooking. Heat grill.3. Mix basting sauce ingredients and set aside for grilling.4. Grill kebabs until fully cooked. During the grilling, turn the kebabs over and baste the cooked sides lightly with basting sauce to develop a glaze.5. For the vinaigrette, combine all of the ingredients in a blender and process until thoroughly blended. (Can be made a day in advance and kept refrigerated.) Mix a bowl of your salad greens and top with vinaigrette. Place salad on chilled plates and place the warm cooked kebabs on top.
