1 red onion, peeled, cut into 1/2 inch wide wedges
2 medium tomatoes, quartered
2 tablespoons extra virgin olive oil
salt and pepper to taste
6 skinless, boneless, chicken breast (about 3 pounds)
2 teaspoons dried oregano
4 tablespoons thinly sliced basil
1 tablespoon balsamic vinegar

Here is how you make Grilled Chicken and Ratatouille:

1. Preheat grill to a medium high heat. Place the zucchini, eggplant, pepper, onion and tomatoe in a large mixing bowl. Drizzle olive oil over the vegetables and season to taste with salt and pepper.2. Grill vegetables until slightly charred, about 4 minutes for the tomatoes and about 7 minutes for the other vegetables. Transfer to a cutting board.3. Place the chicken breast in the same mixing bowl. Turn to coat with any remaining oil in the bowl. Sprinkle chicken with oregano and salt and pepper to taste.
