This is a quick left-over throw together for us, so the chicken and noodles were cooked before. I will add our grilled chicken recipe later.Dice/cube/strip the chicken to your liking and set aside. It does not matter which, it is simply for looks.Cut up the mushrooms. onions & bell peppers. Frozen peppers & onions will work if fresh are not available.Open can of diced tomatoes do NOT drainHeat up tbsp. of oilSaute mushrooms, onions & peppers in the hot oil. If more oil is needed add another tbsp. to keep everything from burning and sticking.When they are cooked to your liking (some prefer them crisper than others) add the chicken and saute for another minute.Add your can of tomatoes and cook another minute or two until hot and bubbly.When it is hot and bubbly, add your pre-cooked noodles (we prefer tri-colored rotini, but any pasta will work)Cover and turn the heat to the lowest setting for 10 min.Carefully remove lid, stir and serve.Serving Size: Makes 3-4 servingsNumber of Servings: 1Recipe submitted by SparkPeople user MOONKITTY77.
