Preheat oven to 350. Mix preserves, mustard, and ginger. Place chicken in a casserole dish. Glaze the top side with the mustard mixture, flip and glaze the other side. Bake for 45-60 minutes, glazing the chicken occasionally, until the chicken is cooked through. Serving suggestion: serve over rice or pasta with vegetables of choice.
