1/2 tsp garlic powder
1/4 tsp pepper
6-5oz chicken breast pieces
Olive Oil cooking spray
1 1/4 cup low sodium, fat free chicken broth
1 Tbls lemon zest
3 Tbls lemon juice (about 1 lemon)
2 tsp reduced calorie margarine (I used I Can't Believe It's Not Butter)
1 package (8-10 oz) Israeli Cous Cous (this is a larger "pearl" than standard cous cous, but feel free to change to smaller "pearls")

Here is how you make Greek Chicken with Lemon Cous Cous:

1. Combine first 3 ingredients and gently sprinkle on chicken.2. Spray broiler and put chicken into oven about 5-6" from heat for ~12 minutes or until done, turning once.3. Meanwhile, combine broth, lemon zest, lemon juice and margarine in pan and bring to a boil. Slowly add cous cous, reduce heat to low, cover and cook for 6-8 minutes or until done. NOTE: If you are using the smaller pearl cous cous, just stir into hot broth, cover and remove from heat.4. Spoon cous cous on plate, top with chicken.
