This recipe takes a 2 to 3 lb chicken. The only thing I could choose from in the drop down up above for ingredience was 1 lb ready to cook roasting chicken.


How Do I Make Grilled Chicken With dijon and Lemon?

Here is how you make Grilled Chicken With dijon and Lemon:

Combine the lemon juice, zest,mustard, rosemary and crushed red pepper in a small bowl. Add 1 to 2 tbls of olive oil to the mustard mxture to loosen it. Cut chicken in half. Paint this mixture generously all over the chicken and let sit up to 2 hours at room temp. or overnight in the fridge. If you have any mustard mixture left safe it to base chicken with while it cooks. Pre heat grill. Season Chicken with salt. Place fat side down on grill. Place lemons on grill and do not move them. They will smell wonderful as they grill. Grill chicken 20 minutes (approx) and turn over and grill 20 minutes (approx). Based with any leftover mustard mixture while grilling. Chicken is done when juices run clear. Squeeze the grilled lemon over the chicken right before serving. If you are making this in the winter. Grill for about 6 minutes on each side and then tranfer to a pre-heated 375 degree oven and bake for about 40 minutes. Number of Servings: 4Recipe submitted by SparkPeople user LAKONDA.
