1 tbs canola oil
zest of one lemon
juice of one lemon (same one the zest is from)
lemon pepper to coat (about 2 tablespoons)
1 pat butter (about 1/2 tbs)
1-1/2 tsp corn starch
1/4 cup low sodium chicken broth
1 tbs. dijon mustard
1/4 cup toasted pistachio nuts, chopped (toast the whole kernel then chop)

Here is how you make Lemon Dijon Chicken with Pistachios:

Pound the chicken breasts between two sheets of plastic wrap or parchment paper until they're about 1/4 inch thick. Coat both sides of the chicken with lemon pepper. Set aside.Zest one lemon.In a large skillet, add 1 tbs. of canola oil and heat over medium heat. Add chicken, lemon zest, and squeeze the lemon over the pan to add the juice.Cook chicken 5 minutes per side or until done on the thickest part of the chicken is cooked through.While the chicken is cooking, combine corn starch and chicken broth.When chicken is done, remove from pan and keep warm. To the pan (still over medium heat), add the butter and swirl it around the pan. Add the chicken broth/corn starch slurry and use a spoon or tongs to get up the bits from the bottom of the pan (deglaze). When the mixture starts to thicken, add the dijon mustard and stir in well. You should have a fairly thick sauce.
