Leeks, 2 chopped
Lemon Peel (zest), about 1 tbsp - from one small lemon
Lemon Juice, from 1 small lemon
Cream Cheese - Philadelphia Extra Light, 50 gram(about a tablespoon)
Ginger Root, 2 tsp (I used one frozen cube)
Ginger, ground, about 1 tbsp
1/2 tsp. Cumin Powder
Chicken stock, home-prepared, 1 cup
(or one stock cube dissolved in a cup of hot water)

Here is how you make Lemon Ginger Chicken:

Heat a non-stick skillet. Slice chicken into bite size strips. Brown chicken on dry skillet, moving the pieces so they brown evenly and don't burn. Add leeks, ginger, cumin and dry fry for a minute. Add Lemon zest, juice and chicken stock. Simmer for 10 minutes. Add Philadelphia extra light cream cheese and once stirred through the dish is ready to serve.
